12 oz spaghetti or pasta of choice
2 tablespoons olive oil
3 cloves garlic, minced
1 cup cooked spinach (fresh or frozen, squeezed dry)
1 can (14 oz) artichoke hearts, drained and roughly chopped
1 cup cream cheese (softened)
¾ cup grated Parmesan cheese
1 cup shredded mozzarella cheese
½ cup heavy cream or whole milk
½ teaspoon crushed red pepper flakes (optional)
Salt and pepper to taste
Fresh parsley or basil for garnish

Optional Add-Ins
¼ cup pesto for a pesto-style twist
½ cup Greek yogurt for a protein boost
Lemon zest or juice for brightness


Instructions

Step 1: Cook the Pasta
Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package directions. Reserve ½ cup pasta water before draining.

Step 2: Sauté Garlic and Artichokes
In a large skillet, heat olive oil over medium heat. Add minced garlic and cook for 1 minute until fragrant. Stir in the chopped artichoke hearts and cook for another 2–3 minutes.

Step 3: Add Spinach and Cream Base
Add the spinach and stir until heated through. Lower the heat and stir in cream cheese, Parmesan, and mozzarella. Add the heavy cream (or milk), and continue to stir until everything is melted and creamy.

Step 4: Combine with Pasta
Add the cooked pasta directly into the skillet. Use tongs or a spoon to toss until well coated. Add a splash of reserved pasta water if the sauce is too thick.

Step 5: Season and Serve
Season with salt, pepper, and red pepper flakes if using. Garnish with fresh herbs and serve immediately.

Notes

Use well-drained artichokes and squeeze spinach to remove water.
Full-fat cream cheese melts best and creates a smooth sauce.
Add pasta water gradually to adjust consistency.
Fresh herbs and lemon zest brighten the flavor.
This pasta can be baked for a golden, cheesy finish if desired.
