Substitutions & Variations for Different Tastes
- Use ricotta instead of feta for a milder, creamier texture.
- Add grated zucchini for a variation on traditional Mediterranean vegetable fritters.
- Use almond flour for a low-carb version.
Instructions
Step 1: Prepare the Spinach Mixture
- If using fresh spinach, finely chop it and lightly sauté in a pan for 2 minutes until wilted. Let it cool and squeeze out excess water.
- If using frozen spinach, thaw and squeeze out as much moisture as possible.
- In a mixing bowl, combine spinach, feta cheese, onion, garlic, salt, pepper, oregano, and paprika.
Step 2: Make the Batter
- In another bowl, whisk together the flour and baking powder.
- Add the beaten eggs to the spinach mixture, followed by the flour mixture. Stir until everything is well combined. The mixture should be thick and sticky.
Step 3: Cook the Fritters to Golden Perfection
- Heat 2 tablespoons of olive oil in a frying pan over medium heat.
- Using a spoon, scoop about 2 tablespoons of batter per fritter into the hot oil, flattening slightly with a spatula.
- Fry for 2-3 minutes per side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
Step 4: Serve and Enjoy!
Serve warm with a side of tzatziki sauce, Greek yogurt, or lemon wedges for a burst of fresh flavor
Notes
✔️ Use block feta instead of pre-crumbled for the best texture and flavor.
✔️ Make sure to remove excess moisture from the spinach to prevent soggy fritters.
✔️ Don’t overcrowd the pan – Cook in batches for even crispiness.
