  • 2 large eggs, beaten
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano (or fresh parsley/dill for extra freshness)
  • ½ teaspoon paprika (optional, for extra depth of flavor)
  • 2 tablespoons olive oil (for frying)

For Serving:

  • Greek yogurt or tzatziki for dipping
  • Lemon wedges for extra freshness

Instructions

Step 1: Prepare the Spinach Mixture

  1. If using fresh spinach, finely chop it and lightly sauté in a pan for 2 minutes until wilted. Let it cool and squeeze out excess water.
  2. If using frozen spinach, thaw and squeeze out as much moisture as possible.
  3. In a mixing bowl, combine spinach, feta cheese, onion, garlic, salt, pepper, oregano, and paprika.

Step 2: Make the Batter

  1. In another bowl, whisk together the flour and baking powder.
  2. Add the beaten eggs to the spinach mixture, followed by the flour mixture. Stir until everything is well combined. The mixture should be thick and sticky.

Step 3: Cook the Fritters to Golden Perfection

  1. Heat 2 tablespoons of olive oil in a frying pan over medium heat.
  2. Using a spoon, scoop about 2 tablespoons of batter per fritter into the hot oil, flattening slightly with a spatula.
  3. Fry for 2-3 minutes per side, or until golden brown and crispy.
  4. Transfer to a paper towel-lined plate to drain excess oil.
