Ingredients

For the Broth: 1 tablespoon sesame oil 4 cloves garlic, minced 1 tablespoon freshly grated ginger 2 tablespoons white miso paste 1 tablespoon soy sauce 1 tablespoon chili garlic sauce 4 cups vegetable broth (or chicken broth) 1 teaspoon rice vinegar 1 teaspoon toasted sesame oil For the Noodles and Toppings: 2 packs ramen noodles (discard seasoning) 1 cup baby spinach 1/2 cup shredded carrots 1/2 cup corn kernels 2 soft-boiled eggs (1 per serving) Sliced scallions Chili oil or sriracha (optional) Optional Add-ins: Sautéed mushrooms Bok choy Tofu Grilled chicken


Instructions

1. In a medium pot, heat sesame oil over medium heat. Sauté garlic and ginger for 1–2 minutes until fragrant. 2. Stir in miso paste, soy sauce, and chili garlic sauce. Whisk to dissolve the miso. 3. Add broth and bring to a boil. Reduce heat and simmer. Stir in rice vinegar and toasted sesame oil. 4. In a separate pot, cook ramen noodles per package directions. Drain and set aside. 5. For eggs, boil for 6–7 minutes, transfer to ice bath, peel, and halve. 6. Divide noodles into bowls. Pour over hot broth. Top with spinach, carrots, corn, egg halves, scallions, and optional chili oil. 7. Garnish and serve immediately.

Notes

Use white miso for a mellow flavor or red miso for more depth. Adjust chili garlic sauce to control spice level. Don’t boil miso too long to preserve flavor. Add tahini or coconut milk for a creamier broth. Store broth and noodles separately to maintain texture.
