  • 2 ½ cups white distilled vinegar
  • 2 ½ cups water
  • 2 tablespoons pickling salt
  • 4 garlic cloves, peeled
  • 4 sprigs fresh dill
  • 4 teaspoons dill seeds
  • 2 teaspoons crushed red pepper flakes (adjust to taste)
  • 1 teaspoon black peppercorns
  • Optional: 4 small hot peppers (such as Thai chilies or jalapeños)

Instructions

  1. Sterilize the jars: Wash jars, lids, and rings in hot soapy water. Place jars in boiling water for 10 minutes and keep hot.
  2. Trim the green beans: Wash and cut beans to fit jars, leaving ½ inch headspace.
  3. Prepare the brine: In a saucepan, combine vinegar, water, and pickling salt. Bring to a boil then simmer.
  4. Pack the jars: Place 1 garlic clove, 1 sprig dill, 1 tsp dill seeds, ½ tsp pepper flakes, and peppercorns in each jar. Pack beans vertically.
  5. Add hot brine: Pour brine over beans, leaving ½ inch headspace. Remove air bubbles, wipe rims, and seal with lids and bands.
  6. Process in water bath: Submerge jars in boiling water and process for 10 minutes. Remove and let cool.
  7. Check seals and store: After 24 hours, check seals. Store sealed jars in a cool, dark place for up to 1 year. Refrigerate after opening.
