Cinnamon Sugar Coating:
- ¼ cup granulated sugar
- 1 tablespoon ground cinnamon
- 2 tablespoons unsalted butter, melted

Instructions
- In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix buttermilk, milk, egg, vanilla, and melted butter.
- Gently combine wet ingredients with dry ingredients until just mixed.
- Heat a non-stick skillet or griddle over medium heat and lightly grease.
- Pour ¼ cup batter per pancake and cook until bubbles form, then flip and cook until golden.
- Mix cinnamon and sugar in a shallow dish.
- Brush warm pancakes with melted butter and coat with cinnamon sugar.
- Serve warm with desired toppings.
