Description

Ingredients

  • ¾ cup buttermilk
  • ¼ cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • ½ teaspoon vanilla extract

Cinnamon Sugar Coating:

  • ¼ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Optional Toppings:

  • Warm chocolate sauce
  • Caramel drizzle
  • Fresh fruit
  • Whipped cream

Instructions

  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, mix buttermilk, milk, egg, vanilla, and melted butter.
  3. Gently combine wet ingredients with dry ingredients until just mixed.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease.
  5. Pour ¼ cup batter per pancake and cook until bubbles form, then flip and cook until golden.
  6. Mix cinnamon and sugar in a shallow dish.
  7. Brush warm pancakes with melted butter and coat with cinnamon sugar.
  8. Serve warm with desired toppings.
