- 5–6 green onions, sliced
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup fresh dill, chopped
- ½ cup parsley, chopped
- 10 oz (280 g) feta cheese, crumbled
- 1 cup ricotta or cottage cheese
- 2 large eggs
- ½ tsp salt
- ½ tsp pepper
For the Phyllo Layers:
- 1 package (16 oz / 450 g) phyllo dough, thawed
- ½–¾ cup olive oil for brushing
- Optional: sesame seeds for topping
Instructions
- Prepare the Filling: Sauté onion in olive oil until soft. Add garlic, green onions, and spinach in batches until wilted and water evaporates. Let cool, then mix with dill, parsley, feta, ricotta, eggs, salt, and pepper.
- Layer the Phyllo: Brush a 9×13-inch baking dish with olive oil. Add 7–8 phyllo sheets, brushing each with oil.
- Add the Filling: Spread spinach mixture evenly over the phyllo base.
- Top Layers: Add 8–10 more phyllo sheets, brushing each with oil. Tuck edges neatly and score the top into squares or diamonds.
- Bake: Bake at 325°F (165°C) for 45–55 minutes, until golden and crisp. Let rest 10 minutes before slicing.
