  • 6 crusty rolls (French or Italian dinner rolls work great)
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley (or 1 teaspoon dried parsley)
  • 3 cups cooked spaghetti (about 8 oz dry pasta)
  • 2 cups marinara or spaghetti sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Optional: Red pepper flakes or Italian seasoning for topping

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare the rolls: Cut a round hole in the top of each roll and hollow out the inside to form a bowl. Don’t cut through the bottom!
  3. Make garlic butter: Mix melted butter, olive oil, garlic, garlic powder, and parsley in a bowl.
  4. Brush and toast: Brush the inside and outside of each roll with garlic butter. Place rolls on the baking sheet and toast for 10–12 minutes until lightly crisped.
  5. Cook spaghetti: If you haven’t already, cook pasta to al dente and drain.
  6. Mix with sauce: In a bowl, toss cooked spaghetti with marinara until fully coated.
  7. Assemble the bowls: Fill each bread bowl with spaghetti, top with mozzarella and Parmesan.
  8. Bake again: Return to the oven and bake for 10–15 minutes until cheese is melted and bubbly.
  9. Serve hot: Garnish with more parsley, red pepper flakes, or extra Parmesan if desired.

Notes

  • Use crusty rolls that can hold up to the heat and filling without going soggy.
  • Brush generously with garlic butter, especially around the edges.
  • Toast before filling to create a moisture barrier and lock in that signature crisp.
