  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat & Prep: Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, whisk together grated zucchini, brown sugar, granulated sugar, oil, eggs, and vanilla until smooth.
  3. Combine Dry Ingredients: In a separate bowl, whisk flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Make Batter: Add dry ingredients to wet ingredients and stir just until combined. Do not overmix.
  5. Create the Swirl: Mix cinnamon and sugar in a small bowl. Pour half the batter into the loaf pan, sprinkle with half the cinnamon sugar, add remaining batter, then top with remaining cinnamon sugar. Swirl gently if desired.
  6. Bake: Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool: Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
