For the Bread:
- 1 ½ cups grated zucchini (do not drain)
- ½ cup packed brown sugar
- ½ cup granulated sugar

- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon baking soda
- ½ teaspoon baking powder

- 2 tablespoons granulated sugar
- 1 teaspoon ground cinnamon
Instructions
- Preheat & Prep: Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- Mix Wet Ingredients: In a large bowl, whisk together grated zucchini, brown sugar, granulated sugar, oil, eggs, and vanilla until smooth.
- Combine Dry Ingredients: In a separate bowl, whisk flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
- Make Batter: Add dry ingredients to wet ingredients and stir just until combined. Do not overmix.
- Create the Swirl: Mix cinnamon and sugar in a small bowl. Pour half the batter into the loaf pan, sprinkle with half the cinnamon sugar, add remaining batter, then top with remaining cinnamon sugar. Swirl gently if desired.
- Bake: Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool: Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

- Do not squeeze zucchini: The natural moisture keeps the bread soft and tender.
- Even slices: Allow the loaf to cool fully before cutting.
