Perfect for meal prep, post-workout snacks, or lunchbox treats.

Ingredients

Scale
  • 1 cup rolled oats (gluten-free if needed)
  • ½ cup vanilla protein powder
  • 2 tbsp ground flaxseed
  • ½ tsp ground cinnamon (plus more for coating)
  • ¼ tsp salt
  • ½ cup peanut butter or almond butter
  • ¼ cup maple syrup
  • 1 tsp vanilla extract

Cinnamon Sugar Coating:

  • 1 tbsp coconut sugar
  • ½ tsp ground cinnamon

Instructions

  1. In a large bowl, mix oats, protein powder, flaxseed, cinnamon, and salt.
  2. Add peanut butter, maple syrup, and vanilla extract. Stir until dough forms. Add 1–2 tsp almond milk if too dry.
  3. Roll mixture into 1-inch balls using a cookie scoop or hands.
  4. In a small bowl, combine coconut sugar and cinnamon. Roll each ball in the coating mixture.
  5. Place bites on a parchment-lined tray and refrigerate 30 minutes until firm.

Notes

  • Use a good-quality vanilla protein powder for best flavor.
  • Adjust dough consistency with oats or almond milk as needed.
  • Chill before serving to help bites hold shape.
  • For nut-free version, use sunflower seed butter or tahini.
  • Store in fridge for up to 1 week or freezer for 3 months.
