For the Sauce:
- 1/2 cup parmesan cheese, grated
- 1/2 cup pecorino romano cheese, grated
Instructions
- Cook the pasta: Boil the pasta in salted water according to the package directions. Reserve 1 cup of pasta water before draining.
- Prepare the sauce: In a mixing bowl, whisk together the eggs and heavy cream. Stir in the grated Parmesan and Pecorino Romano cheeses, and season with salt and freshly ground black pepper.
- Sauté the garlic: Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Combine the pasta and smoked salmon: Add the cooked pasta to the skillet with the garlic and smoked salmon strips. Toss everything together to combine.
- Make the carbonara sauce: Remove the skillet from the heat. Quickly pour the egg and cream mixture over the pasta, stirring quickly to avoid scrambling the eggs. Add reserved pasta water to adjust the consistency, if needed.
- Garnish and serve: Garnish with fresh parsley, lemon zest, and black pepper. Serve immediately and enjoy!
