This Slow Cooker Shrimp Boil is a low-country classic made easy at home. Loaded with shrimp, sausage, potatoes, and corn simmered in Cajun-spiced broth, it’s a comforting, one-pot seafood dinner perfect for weeknights, gatherings, or meal prep.

- 1 ½ pounds baby potatoes (halved if large)
- 3 ears corn, cut into 3–4 pieces each
- 12 oz smoked sausage, sliced
- 4 garlic cloves, minced
- 4 cups low-sodium chicken broth
- 2 tbsp Old Bay seasoning (or Cajun blend)
- 1 tsp paprika
- ½ tsp black pepper
- 1 lemon, cut into wedges
- 1 lb large shrimp, peeled and deveined
- 2 tbsp unsalted butter, melted
- Fresh parsley, chopped (for garnish)
- Extra lemon wedges, for serving
Optional Add-ins:
- Crab legs, mussels, or lobster tails
- Diced red onion or bell peppers
Instructions
- Layer base: Add potatoes, sausage, garlic, seasonings, and broth to the slow cooker. Stir to combine.
- Add corn: Place corn and lemon wedges on top. Cover and cook on high 3–4 hours or low 6–7 hours, until potatoes are tender.
- Cook shrimp: Stir in shrimp and melted butter during the last 15–20 minutes, until shrimp turn pink.
- Serve: Transfer to a serving platter with a slotted spoon. Garnish with parsley and serve with lemon wedges.

- Add shrimp at the very end to avoid overcooking.
