When your day is packed and the family is hungry, there’s one recipe you can always count on: Slow Cooker Parmesan Garlic Chicken Sandwiches.
Ingredients
- 2 pounds boneless, skinless chicken breasts or thighs
- 1 packet dry ranch seasoning mix
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 1 cup grated parmesan cheese
- 4 ounces cream cheese (half a block)
- ½ cup chicken broth
- 6 sub buns, hoagie rolls, or sandwich rolls
- 1 tablespoon olive oil or melted butter (optional, for toasting buns)
- Optional toppings: provolone or mozzarella cheese slices, lettuce, tomato, pickles, banana peppers
Instructions
Step 1: Load the slow cooker
Place the chicken breasts in the bottom of the slow cooker. Sprinkle with ranch seasoning, garlic powder, onion powder, and grated parmesan. Add the chicken broth and place cream cheese on top.
Step 2: Cook low and slow
Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fork-tender.
Step 3: Shred the chicken
Once fully cooked, use two forks to shred the chicken right in the slow cooker. Stir the mixture to combine with the melted cream cheese and parmesan. It should be thick, creamy, and packed with flavor.
Step 4: Toast the buns (optional)
Slice the sub rolls and brush lightly with olive oil or butter. Toast them under the broiler or in a toaster oven for 2–3 minutes until golden.
Step 5: Assemble the sandwiches
Spoon a generous amount of the shredded chicken mixture onto each bun. Top with extra cheese slices if desired and place under the broiler for a cheesy melt.
Step 6: Add your toppings and serve
Finish with lettuce, tomato, pickles, or banana peppers. Serve warm with your favorite sides.
Notes
- Always use enough liquid in your slow cooker to avoid dry chicken. The broth and cream cheese help keep the meat moist.
- Stir the shredded chicken back into the sauce to soak up maximum flavor.
- Toasting the buns prevents them from getting soggy.
