- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (15 oz) can chickpeas (garbanzo beans), drained and rinsed
- ½ cup dried apricots, chopped
- 1½ tsp ground cumin
- 1 tsp ground ginger
- ½ tsp ground cinnamon
- ½ tsp ground black pepper
- ½ tsp salt
- ¼ tsp cayenne pepper
- 1 cup chicken broth
Instructions
- Layer chicken: Place chicken thighs in the bottom of the slow cooker.
- Add vegetables: Top with onion, garlic, carrots, celery, and bell peppers.
- Add remaining ingredients: Sprinkle in diced tomatoes, chickpeas, dried apricots, and all spices.
- Add broth: Pour chicken broth over the top. Do not stir.
- Slow cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Finish: Shred chicken if desired and gently stir before serving.
