  • ½ cup chopped red bell pepper
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (15 oz) can chickpeas (garbanzo beans), drained and rinsed
  • ½ cup dried apricots, chopped
  • 1½ tsp ground cumin
  • 1 tsp ground ginger
  • ½ tsp ground cinnamon
  • ½ tsp ground black pepper
  • ½ tsp salt
  • ¼ tsp cayenne pepper
  • 1 cup chicken broth

Instructions

  1. Layer chicken: Place chicken thighs in the bottom of the slow cooker.
  2. Add vegetables: Top with onion, garlic, carrots, celery, and bell peppers.
  3. Add remaining ingredients: Sprinkle in diced tomatoes, chickpeas, dried apricots, and all spices.
  4. Add broth: Pour chicken broth over the top. Do not stir.
  5. Slow cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  6. Finish: Shred chicken if desired and gently stir before serving.
