1 cup uncooked long-grain white rice

2¼ cups low sodium chicken broth

1 medium onion, diced

3 garlic cloves, minced

1 tablespoon lemon zest

2 tablespoons fresh lemon juice

1½ teaspoons dried Italian herbs or 1 tablespoon fresh chopped thyme, rosemary, or parsley

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil

Instructions

Season the chicken breasts with salt, pepper, and Italian herbs.
