Ingredients
- 2 lbs boneless, skinless chicken breasts or thighs
- ½ cup Dijon mustard
- ¼ cup honey
- 2 tablespoons yellow mustard
- 2 tablespoons apple cider vinegar
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: chopped fresh parsley or green onions for garnish
- Buns, rolls, or wraps for serving
Instructions
In a small mixing bowl, whisk together Dijon mustard, yellow mustard, honey, apple cider vinegar, olive oil, garlic powder, onion powder, salt, and pepper.
Place the chicken breasts or thighs in the bottom of your slow cooker. Pour the sauce evenly over the chicken.
Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is fully cooked and easy to shred.
Remove the chicken and shred using two forks. Return the shredded chicken to the sauce in the crockpot and stir well to coat.
Spoon the shredded chicken onto your choice of bread, rolls, or wraps. Garnish with parsley, if desired.
Notes
- Use boneless chicken thighs for even more moisture and flavor.
- Cook low and slow for the most tender results.
- Shred the chicken while warm—it’s much easier than waiting.
