This Slow Cooker Greek Chicken is juicy, flavorful, and infused with Mediterranean herbs, garlic, lemon, and olive oil — the perfect healthy family dinner that practically cooks itself. Ingredients
2–2.5 lbs (900–1150g) boneless, skinless chicken thighs or breasts 1/4 cup (60ml) olive oil Juice of 1 large lemon Zest of 1 lemon 4 cloves garlic, minced 1 tablespoon dried oregano 1 teaspoon salt 1/2 teaspoon black pepper 1/2 teaspoon crushed red pepper flakes (optional) 1/2 cup (120ml) chicken broth 1/4 cup (40g) chopped fresh parsley (for garnish) Optional Greek Yogurt Sauce: 1/2 cup (120g) plain Greek yogurt 1 tablespoon lemon juice 1 tablespoon chopped fresh dill Pinch of salt
Instructions
1. In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, pepper, and red pepper flakes. 2. Place chicken in the slow cooker and pour marinade over, turning pieces to coat evenly. Pour chicken broth around the sides. 3. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender and cooked through. 4. Shred chicken slightly with two forks or leave pieces whole. Garnish with fresh parsley and serve with your choice of sides. 5. For the optional yogurt sauce, whisk all ingredients together and serve alongside the chicken.
