Description

Looking for a simple yet delicious dinner that practically cooks itself? This Slow Cooker Garlic Butter Chicken and Potatoes is a game-changer! Tender chicken and perfectly cooked potatoes are bathed in a rich and savory garlic butter sauce, making this dish the ultimate comfort food. Whether you’re short on time or just want a hands-off dinner, this recipe is the perfect solution for busy weeknights or lazy weekends.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (or thighs if you prefer)
  • 1 lb baby potatoes, halved (or quartered if large)
  • 1/2 cup unsalted butter, melted
  • 6 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper
  • 1/4 cup chicken broth
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Start by placing the halved baby potatoes in the bottom of your slow cooker. Season the chicken breasts with salt and pepper and place them on top of the potatoes.
  2. In a small mixing bowl, combine the melted butter, minced garlic, dried thyme, rosemary, and chicken broth. Stir well to combine.
  3. Pour the garlic butter mixture evenly over the chicken and potatoes in the slow cooker. Use a spoon to ensure everything is coated with the sauce.
  4. Cover the slow cooker and set it to cook on low for 6-7 hours or high for 3-4 hours. The chicken should be fully cooked (internal temperature should reach 165°F), and the potatoes should be fork-tender.
  5. Once the chicken and potatoes are cooked, serve them on a platter and garnish with freshly chopped parsley. You can also spoon some of the extra garlic butter sauce from the slow cooker over the top for added flavor.

Notes

  • Don’t overcook the chicken: Overcooking chicken in the slow cooker can make it dry. To prevent this, make sure to check the chicken’s internal temperature around the 3-hour mark if cooking on high, or the 6-hour mark on low.
  • Customize the herbs: If you’re not a fan of rosemary or thyme, you can substitute with your favorite herbs, like Italian seasoning or fresh parsley.
  • Add veggies: Feel free to add other vegetables, such as carrots or bell peppers, for extra flavor and nutrition.
