Slow Cooker Cowboy Casserole : Hearty Comfort Food

If you’re craving a warm, filling, no-fuss dinner that practically makes itself, this Slow Cooker Cowboy Casserole is the ultimate family-friendly meal

Here’s everything you’ll need to serve 6–8:

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can kidney beans or pinto beans, drained and rinsed
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • ½ cup milk
  • 1½ cups shredded cheddar cheese, divided
  • 45 medium potatoes, peeled and sliced (about to ¼-inch thick)
  • Salt and pepper, to taste
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme or oregano (optional)

Ingredient Notes:

  • You can substitute cream of chicken soup or a homemade version
  • Try frozen diced potatoes or hash browns to save time
  • Use any cheese you like — Monterey Jack or Colby work great

Instructions

Step 1: Brown the Beef
In a skillet over medium heat, brown the ground beef with diced onions and garlic. Season with salt and pepper. Drain excess grease and set aside.

Step 2: Mix the Sauce
In a bowl, stir together the cream of mushroom soup, milk, paprika, and onion powder until well combined.

Step 3: Assemble in the Slow Cooker
Grease the inside of your slow cooker. Layer half of the sliced potatoes on the bottom. Top with half the ground beef, half the corn, half the beans, and a sprinkle of cheese. Spoon over some of the soup mixture. Repeat layers.

Step 4: Cook
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.

Step 5: Add Cheese and Serve
About 10 minutes before serving, sprinkle the remaining cheese on top and let it melt. Garnish with chopped parsley if desired. Serve warm

Notes

  • Slice potatoes evenly so they cook at the same rate
  • Use lean ground beef to avoid excess grease
  • Shred your own cheese for better melt and flavor
