Description

Slow Cooker Buffalo Chicken Sweet Potatoes are a bold, comforting, and clean-eating friendly meal made with tender shredded buffalo chicken served over perfectly roasted sweet potatoes.
This Paleo and Whole30-compliant recipe is packed with flavor, easy to prepare, and perfect for busy weeknights or meal prep.

Ingredients

Scale

For the Buffalo Chicken:

  • 1.5 pounds (680 g) boneless, skinless chicken breasts
  • 1/2 cup Whole30-compliant hot sauce
  • 2 tablespoons ghee
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste

For the Sweet Potatoes:

  • 4 medium sweet potatoes, scrubbed clean

Optional Toppings:

  • Avocado slices
  • Green onions
  • Fresh herbs
  • Whole30-compliant ranch

Instructions

  1. Place the chicken breasts in the slow cooker and season with garlic powder, onion powder, salt, and black pepper.
  2. In a small saucepan over low heat, melt the ghee and whisk it with the hot sauce until smooth.
  3. Pour the buffalo sauce over the chicken, ensuring it is evenly coated.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is tender.
  5. Shred the chicken directly in the slow cooker using two forks and stir well to coat in sauce.
  6. Preheat the oven to 400°F (200°C). Pierce sweet potatoes with a fork and place on a baking sheet.
  7. Roast sweet potatoes for 40–50 minutes, until soft and caramelized.
  8. Slice open the sweet potatoes, fluff the insides, and top generously with buffalo chicken.
  9. Serve warm with desired toppings.

Notes

  • Chicken thighs can be used instead of breasts for extra juiciness.
  • Let the slow cooker lid stay off for the last 20 minutes to thicken the sauce slightly.
  • Always check hot sauce labels to ensure Whole30 compliance.
  • Sweet potatoes are best roasted rather than slow-cooked for better texture.
