This Slow Cooker Beef Brisket is fall-apart tender, juicy, and full of flavor. With a homemade BBQ sauce and a caramelized crust, it’s the perfect recipe for weeknights, holidays, or meal prep.

For the Brisket:
- 1.5–2 kg (3–4 lb) beef brisket (not corned beef)
- 2 tsp salt
- 1 tsp black pepper
- 1.5 tbsp olive oil
- 3 garlic cloves, minced
- 1 onion, sliced
For the Homemade BBQ Sauce:
- 1 1/2 cups ketchup
- 1/2 cup apple cider vinegar
- 1/2 cup packed brown sugar
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cayenne pepper (optional)
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Season: Pat brisket dry and season with salt and pepper.
- Sear: Heat olive oil in a skillet and sear brisket 2–3 minutes per side until browned.
- Mix sauce: Whisk all BBQ sauce ingredients together.
- Assemble: Place sliced onions and garlic in the slow cooker, add brisket, and pour sauce over.
- Cook: Cover and cook on low for 8–10 hours (or high 4–5 hours) until fork-tender.
- Broil: Transfer brisket to a baking sheet, brush with sauce, and broil 5–10 minutes until caramelized.
- Serve: Rest 10–15 minutes, slice against the grain, and serve with remaining sauce.
