  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 2 chipotle peppers in adobo, chopped
  • 1 1/2 cups beef broth
  • 1 tbsp apple cider vinegar
  • Juice of 1 lime

  • Corn or flour tortillas
  • Fresh cilantro

Instructions

  1. Sear the beef: Season chuck roast with salt and pepper. Heat olive oil in a skillet and sear on all sides until browned.
  2. Build the base: Place seared beef in the slow cooker. Add onions, garlic, tomato paste, cumin, oregano, smoked paprika, chili powder, and chipotle peppers.
  3. Add liquids: Pour in beef broth, apple cider vinegar, and lime juice. Cover and cook on LOW for 8 hours or HIGH for 4–5 hours until tender.
  4. Shred the beef: Remove roast, shred with two forks, skim fat from sauce, then return beef to soak in juices.
