For the Beef:
- 3 lbs beef chuck roast
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 onion, diced
- 4 garlic cloves, minced
- 1 tbsp tomato paste
- 2 tsp ground cumin
- 2 tsp dried oregano
- 1 tsp smoked paprika
- 1 tsp chili powder
- 2 chipotle peppers in adobo, chopped
- 1 1/2 cups beef broth
- 1 tbsp apple cider vinegar
- Juice of 1 lime
For Serving:
- Corn or flour tortillas
- Fresh cilantro
- Chopped onions
- Crumbled queso fresco or shredded cheese
- Lime wedges
- Optional toppings: avocado slices, pickled red onions, crema
Instructions
- Sear the beef: Season chuck roast with salt and pepper. Heat olive oil in a skillet and sear on all sides until browned.
- Build the base: Place seared beef in the slow cooker. Add onions, garlic, tomato paste, cumin, oregano, smoked paprika, chili powder, and chipotle peppers.
- Add liquids: Pour in beef broth, apple cider vinegar, and lime juice. Cover and cook on LOW for 8 hours or HIGH for 4–5 hours until tender.
- Shred the beef: Remove roast, shred with two forks, skim fat from sauce, then return beef to soak in juices.
- Serve: Fill tortillas with shredded beef and top with cilantro, onions, queso fresco, and lime wedges.
