  • Author: Lyndy
  • Total Time: 20 minutes
  • Yield: 4 servings 1x

Description

Shrimp Scampi is a classic, restaurant-style seafood dish made with juicy shrimp sautéed in a rich garlic-butter sauce with fresh lemon and herbs. Ready in about 20 minutes, this elegant yet easy dinner is perfect for weeknights, date nights, or entertaining guests at home.

Ingredients

Scale

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • Salt and black pepper, to taste

For the Garlic Butter Sauce:

  • 4 cloves garlic, minced
  • ½ cup dry white wine or low-sodium chicken broth
  • 2 tablespoons fresh lemon juice
  • ¼ cup fresh parsley, chopped

Optional:

  • Red pepper flakes (for heat)
  • Lemon wedges, for serving

Instructions

  1. Season shrimp: Pat shrimp dry and season lightly with salt and pepper.
  2. Sauté shrimp: Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Cook shrimp 1–2 minutes per side until pink. Remove and set aside.
  3. Cook garlic: Reduce heat to medium, add remaining butter and garlic, and sauté until fragrant (30–60 seconds).
  4. Deglaze: Pour in white wine (or broth) and lemon juice. Simmer 1–2 minutes to slightly reduce.
  5. Finish: Return shrimp to skillet, toss to coat, and sprinkle with parsley.
  6. Serve: Serve immediately over pasta, rice, or with crusty bread.

Notes

  • Do not overcook shrimp: Shrimp should be just opaque to stay tender.
  • Wine-free option: Chicken broth works perfectly in place of wine.
  • Extra flavor: Add red pepper flakes or toss in spinach or cherry tomatoes at the end.
  • Serving tip: A splash of pasta water makes the sauce extra silky when serving with noodles.
