  • 12 oz cavatappi or penne pasta
  • 1 lb shrimp, peeled and deveined
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 1 cup chicken or seafood broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 cup mozzarella cheese, shredded
  • ½ cup cherry tomatoes, halved
  • 2 tablespoons lemon juice
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon blackened seasoning (for blackened shrimp cavatappi variation)
  • ¼ teaspoon black pepper

For the Topping:

  • ½ cup panko breadcrumbs
  • ¼ cup Parmesan cheese, grated
  • 1 tablespoon butter, melted
  • 1 tablespoon fresh parsley, chopped

Instructions

Step 1: Cook the Pasta

Boil the cavatappi or penne pasta in salted water until al dente. Drain and set aside.

Step 2: Cook the Shrimp

In a large oven-safe skillet, melt butter over medium heat. Add the garlic and cook for 30 seconds until fragrant. Toss in the shrimp, season with salt, pepper, and blackened seasoning (if using), and sauté for 2-3 minutes until pink. Remove from the skillet and set aside.

Step 3: Make the Creamy Scampi Sauce

In the same skillet, add chicken broth, heavy cream, lemon juice, and Italian seasoning. Simmer for 2 minutes. Stir in Parmesan cheese until melted and smooth.

Step 4: Assemble the Pasta Bake

Return the pasta and shrimp to the skillet, stirring to coat in the sauce. Add cherry tomatoes and mozzarella cheese, mixing gently.

Step 5: Add the Crispy Topping

In a small bowl, mix panko breadcrumbs, melted butter, and Parmesan cheese. Sprinkle over the pasta.

Step 6: Bake Until Golden

Preheat your oven to 375°F (190°C). Bake for 15 minutes until bubbly and golden brown.

Step 7: Garnish and Serve
