  • 1½ cups frozen corn
  • 1½ cups frozen peas

Mashed Potato Topping:

  • 3½ cups Yukon Gold potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 1/2 cup milk
  • 1/2 cup sour cream
  • Salt and pepper, to taste

Instructions

  1. Cook the potatoes: Boil potatoes in salted water until fork-tender, about 15 minutes. Drain and set aside.
  2. Sauté onion: Heat olive oil in a large pot over medium heat. Cook onion 5–7 minutes until softened.
  3. Brown meat: Add ground beef and sausage. Cook until browned, breaking it apart. Drain excess grease.
  4. Build flavor: Stir in garlic and tomato paste; cook 1–2 minutes.
  5. Add liquids & seasonings: Pour in beef stock, Worcestershire sauce, Italian seasoning, paprika, salt, and pepper.
  6. Simmer vegetables: Add carrots and simmer 15–20 minutes until tender.
  7. Finish soup: Stir in peas and corn; simmer 5 more minutes.
  8. Mash potatoes: Mash cooked potatoes with butter, milk, sour cream, salt, and pepper until smooth.
  9. Serve: Ladle soup into bowls and top with a generous scoop of mashed potatoes.
