  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • Warm flour or corn tortillas, for serving
  • Fresh cilantro, chopped (for garnish)
  • Optional toppings: avocado, salsa, shredded lettuce, sour cream, lime wedges

Instructions

1. Preheat your oven
Set the oven to 425°F (220°C). Line a large sheet pan with foil or parchment paper for easy cleanup.

2. Prepare the vegetables
Thinly slice the bell peppers and onion. Place them on the sheet pan.

3. Toss the shrimp and veggies with seasoning
In a large mixing bowl, combine olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, crushed red pepper flakes, salt, and pepper. Add the shrimp and vegetables, and toss until everything is evenly coated.

4. Spread on the sheet pan
Evenly distribute the shrimp and veggies on the prepared sheet pan. Spread them out in a single layer to promote even roasting.

5. Roast in the oven
Bake for 8 to 10 minutes, or until the shrimp are opaque and cooked through and the vegetables are tender-crisp. Do not overcook—the shrimp should be just done.

6. Warm the tortillas
While the shrimp bake, warm tortillas in a dry skillet or microwave.

7. Assemble the fajitas
Spoon the shrimp and veggies into warm tortillas. Garnish with cilantro and any additional toppings of choice.

8. Serve immediately
Serve hot with lime wedges on the side for extra zest.
