Ingredients
4–5 medium sweet potatoes, peeled and cut into 1-inch cubes 4 fully cooked sausage links (chicken, turkey, or beef), sliced into 1-inch pieces 1 red onion, sliced into wedges 1 red bell pepper, sliced 1 zucchini, sliced into half-moons 3 tablespoons olive oil 1 teaspoon smoked paprika 1 teaspoon garlic powder 1/2 teaspoon dried thyme Salt and black pepper, to taste Fresh parsley, for garnish
Instructions
1. Preheat oven to 425°F (220°C) and line a large sheet pan with parchment paper or lightly grease it. 2. In a large bowl, combine sweet potatoes, red onion, bell pepper, zucchini, and sausage slices. 3. Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, thyme, salt, and pepper. Toss until evenly coated. 4. Spread mixture in a single layer on the prepared sheet pan. 5. Roast for 25–30 minutes, stirring halfway through, until sweet potatoes are tender and sausage is browned. 6. Garnish with fresh parsley and serve warm.
Notes
• Cut sweet potatoes into even pieces so they cook evenly. • Don’t overcrowd the sheet pan — use two if needed for crispier results. • Prepare everything ahead and refrigerate until ready to roast for a faster dinner.
