This Sheet Pan Meatloaf is a cozy, hearty dinner made easy! Inspired by classic comfort food, it’s cooked alongside vegetables on one tray for quick prep and simple cleanup. Juicy, flavorful mini loaves with a sweet glaze pair perfectly with roasted potatoes and carrots, making this a weeknight dinner the whole family will love.

For the Meatloaf:
- 2 lbs ground beef (or beef/pork blend)
- 1 cup breadcrumbs
- 2 large eggs
- 1/2 cup milk
- 1/2 onion, finely diced
- 2 garlic cloves, minced
- 1/4 cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried parsley
For the Glaze:
- 1/4 cup ketchup
- 2 tbsp brown sugar
- 1 tsp yellow mustard
Optional Vegetables:
- 1 lb baby potatoes, halved
- 1 lb carrots, sliced
- 1 tbsp olive oil
- Salt & pepper to taste
- Optional: garlic powder, rosemary, or thyme
Instructions
- Preheat oven: Preheat to 400°F (200°C) and line a sheet pan with parchment or foil.
- Mix meatloaf: In a bowl, combine beef, breadcrumbs, eggs, milk, onion, garlic, ketchup, Worcestershire sauce, salt, pepper, and parsley. Mix gently until just combined.
- Shape loaves: Divide mixture into 4–6 mini loaves and place on one side of the sheet pan.
- Add veggies: Toss potatoes and carrots with olive oil, salt, and pepper. Spread on the other side of the pan.
- Bake: Bake for 25 minutes. Remove and brush loaves with glaze. Return to oven for 10–15 minutes, until internal temp reaches 160°F.
- Serve: Let rest 5 minutes, then plate with veggies and serve hot.
Notes
- Use lean beef (85/15 or 90/10) for best results.
- Grate onions for better texture and flavor.
- Add shredded zucchini or carrots for extra moisture and veggies.
- Swap ketchup glaze for BBQ sauce if preferred.
- To meal prep, shape mini loaves in advance and refrigerate up to 24 hours before baking.
