4 corn tortillas, cut into strips 6 large eggs 2 tablespoons milk or cream (optional) 1/2 medium onion, diced 1 medium tomato, diced Handful fresh cilantro, chopped 1/2 cup shredded cheese (cheddar, Monterey Jack, or queso fresco) 2 tablespoons butter or oil Salt and pepper, to taste Optional: jalapeño slices, salsa, avocado, or hot sauce


Instructions

1. Cut tortillas into strips. Dice onion, tomato, and chop cilantro. Beat eggs with milk, salt, and pepper. 2. Heat 1 tablespoon butter or oil in a skillet over medium heat. Fry tortilla strips until golden and crispy. Set aside. 3. In the same skillet, sauté onion until translucent, then add tomato and cook for 1 minute. 4. Reduce heat slightly, pour in beaten eggs, and scramble gently. 5. Just before eggs are fully set, stir in crispy tortillas. 6. Sprinkle with cheese and let it melt slightly. Garnish with cilantro. 7. Serve warm with optional toppings or wrapped in tortillas as breakfast tacos.

Notes
