- 1 cup granulated sugar
- 1 cup creamy peanut butter
- 6 cups crispy rice cereal
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
Instructions
- Prepare the pan: Lightly grease a 9×13-inch baking dish or line it with parchment paper.
- Heat the syrup: In a large saucepan over medium heat, combine the corn syrup and sugar. Stir constantly until the sugar dissolves and the mixture just begins to bubble. Remove from heat immediately.
- Add peanut butter: Stir in the peanut butter until smooth and fully combined.
- Add cereal: Gently fold in the crispy rice cereal until evenly coated.
- Press into pan: Transfer the mixture to the prepared pan and press down gently to spread evenly.
- Melt topping: In a microwave-safe bowl, combine chocolate chips and butterscotch chips. Microwave in 30-second intervals, stirring between each, until smooth.
- Top and set: Spread the melted chocolate mixture evenly over the cereal base. Let cool completely at room temperature before slicing.
Notes
- Do not overheat the sugar mixture or the bars may become too hard.
- Use creamy peanut butter — natural peanut butter does not set properly.
- Press the cereal mixture gently to keep the bars chewy.
- For extra indulgence, increase the chocolate and butterscotch chips to 1½ cups each.
