Ingredients

Instructions
Boil the Potatoes Place peeled and quartered potatoes into a large pot. Cover with cold water, add salt, bring to a boil, then simmer for 15–20 minutes until tender. Warm the Milk and Scallions In a small saucepan, gently heat the milk and scallions over low heat for 5–7 minutes. Do not let it boil. Mash the Potatoes Drain the cooked potatoes and return them to the pot. Mash until smooth and fluffy. Combine and Season Gradually add the warm milk and scallion mixture, then butter, salt, and pepper. Stir until fully incorporated and creamy. Serve Hot Spoon into a serving bowl, top with extra butter, and enjoy immediately.
