  • 6 large Portobello mushroom caps, stems and gills removed
  • 1 lb Italian sausage (mild or hot)
  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup baby spinach, chopped
  • 1/2 cup Parmesan cheese, grated
  • 1 cup shredded mozzarella
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. Prep Mushrooms: Preheat oven to 375°F (190°C). Line a baking sheet with parchment. Clean the mushroom caps and remove stems and gills. Brush with olive oil, season lightly, and place gill-side up.
  2. Cook Sausage: In a skillet over medium heat, cook sausage until mostly browned.
  3. Add Aromatics: Add diced onion and garlic. Cook 3–4 minutes until softened.
  4. Add Spinach: Stir in chopped spinach and cook until wilted. Remove from heat and fold in Parmesan.
  5. Stuff Mushrooms: Spoon filling into each mushroom cap and top with shredded mozzarella.
  6. Bake: Bake 20–25 minutes until mushrooms are tender and cheese is bubbly and golden.
  7. Serve: Garnish with parsley and serve warm.
