Description

Sausage Oatmeal is a hearty, savory, and cheesy baked breakfast made with rolled oats, flavorful sausage, sharp cheddar, and warm spices. This comforting dish is perfect for busy mornings, weekend brunch, or make-ahead meal prep, offering protein, fiber, and rich flavor in every bite.

Ingredients

Scale
  • 1 lb (450 g) ground breakfast sausage (turkey sausage optional)
  • 3 cups (720 ml) milk
  • 1 1/2 cups (135 g) old-fashioned rolled oats
  • 2 cups (200 g) shredded sharp cheddar cheese, divided
  • 1 large egg
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried parsley or 1 tablespoon fresh chopped parsley
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • Optional: 1 cup chopped kale or spinach

Instructions

  1. Preheat: Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook Sausage: In a skillet over medium heat, brown the sausage until fully cooked. Drain excess fat.
  3. Mix Wet Ingredients: In a large bowl, whisk together the milk and egg.
  4. Combine: Stir in oats, cooked sausage, onion powder, garlic powder, parsley, salt, and black pepper.
  5. Add Cheese: Mix in 1 1/2 cups of the shredded cheddar. Fold in kale or spinach if using.
  6. Bake: Pour mixture into the baking dish, spread evenly, and top with remaining cheese. Bake for 30–35 minutes until set and lightly golden.
  7. Rest & Serve: Let rest for 5 minutes before slicing and serving.

Notes

  • Use old-fashioned rolled oats, not quick oats, for best texture.
  • Drain sausage well to avoid excess grease.
  • The egg helps bind the dish and adds creaminess.
  • Customize with vegetables, different cheeses, or spices.
  • Great for meal prep—slices reheat well.
