  • 1.52 tablespoons cornstarch
  • 23 tablespoons maple syrup or liquid sweetener
  • 2 tablespoons rice vinegar or lemon juice
  • 1 tablespoon sesame oil
  • 1/4 teaspoon ground black pepper
  • 1/2 tablespoon chili garlic sauce (optional)
  • 2 cloves garlic, minced (optional)

Optional Add-Ins:

  • Extra-firm tofu, pan-fried
  • Mushrooms or mixed vegetables (bell peppers, spinach)
  • Scallions and sesame seeds, for garnish

Instructions

  1. Make the sauce: Whisk together broth, soy sauce, cornstarch, maple syrup, vinegar, sesame oil, pepper, chili garlic sauce, and garlic until smooth.
  2. Cook noodles: Boil ramen noodles until slightly underdone. Drain and set aside.
  3. Prepare add-ins (optional): Sauté tofu or vegetables in a pan until lightly browned.
  4. Simmer sauce: Pour sauce into a pan over medium heat and simmer until slightly thickened.
  5. Add noodles: Toss noodles into the sauce and cook 2–3 minutes until fully coated and glossy.
  6. Finish & serve: Adjust seasoning, garnish with scallions and sesame seeds, and serve hot.
