Noodles:
- 2 packs dry instant ramen noodles (discard seasoning packets)
Saucy Base:
- 1 cup water or vegetable broth
- 3–4 tablespoons soy sauce (or tamari)
- 1.5–2 tablespoons cornstarch
- 2–3 tablespoons maple syrup or liquid sweetener
- 2 tablespoons rice vinegar or lemon juice
- 1 tablespoon sesame oil
- 1/4 teaspoon ground black pepper
- 1/2 tablespoon chili garlic sauce (optional)
- 2 cloves garlic, minced (optional)
Optional Add-Ins:
- Extra-firm tofu, pan-fried
- Mushrooms or mixed vegetables (bell peppers, spinach)
- Scallions and sesame seeds, for garnish
Instructions
- Make the sauce: Whisk together broth, soy sauce, cornstarch, maple syrup, vinegar, sesame oil, pepper, chili garlic sauce, and garlic until smooth.
- Cook noodles: Boil ramen noodles until slightly underdone. Drain and set aside.
- Prepare add-ins (optional): Sauté tofu or vegetables in a pan until lightly browned.
- Simmer sauce: Pour sauce into a pan over medium heat and simmer until slightly thickened.
- Add noodles: Toss noodles into the sauce and cook 2–3 minutes until fully coated and glossy.
- Finish & serve: Adjust seasoning, garnish with scallions and sesame seeds, and serve hot.

- Noodle texture: Slightly undercook noodles so they finish perfectly in the sauce.
