  • 6 slices thick-cut bacon, chopped
  • 1 medium onion, chopped
  • 1 small green bell pepper, diced
  • 1 small red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 ½ teaspoons Cajun seasoning (or more to taste)
  • 6 eggs, beaten
  • 2 tablespoons butter
  • 1 ½ cups cooked white rice (or grits for variation)
  • Salt and black pepper to taste
  • 2 tablespoons green onions or fresh parsley (for garnish)

Optional Add-ins

  • ½ cup shredded cheddar or pepper jack cheese
  • Diced andouille sausage
  • Chopped tomatoes or okra
  • Hot sauce for serving

Instructions

Step 1: Cook the Meats

In a large cast-iron or non-stick skillet, cook the chopped bacon over medium heat until crisp. Remove and drain on a paper towel, leaving the drippings in the pan. Add the sausage and break it up as it browns. Cook until no longer pink.

Step 2: Add the Veggies and Aromatics

Add chopped onion and bell peppers to the skillet with the sausage. Sauté until tender, about 5 minutes. Stir in garlic and cook for 1 minute more.

Step 3: Season the Skillet

Sprinkle in Cajun seasoning, salt, and pepper. Stir well to coat the meat and vegetables in seasoning. Add butter for extra richness and allow it to melt.

Step 4: Scramble the Eggs

Push the mixture to one side of the skillet. Pour the beaten eggs into the open space and gently scramble. Once set, combine with the sausage and veggie mixture.

Step 5: Add the Rice or Grits

Stir in the cooked rice or grits until everything is heated through and well combined. Add cheese now if using, and mix to melt.

Step 6: Garnish and Serve

Remove from heat and sprinkle with chopped green onions or parsley. Serve hot with your favorite hot sauce on the side.
