- 1/2 cup heavy cream
- 1/2 tsp sea salt
Instructions
- Prepare the crust: Preheat oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter. Press into springform pan and bake 8–10 minutes. Cool completely.
- Make the cheesecake filling: Beat cream cheese and sugar until smooth. Add vanilla and sour cream, then eggs one at a time. Pour over crust. Bake 40–45 minutes until set but slightly jiggly. Cool and refrigerate at least 4 hours or overnight.
- Cook the apple topping: In a saucepan, cook apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until tender and thickened. Cool completely.
- Prepare salted caramel: In a saucepan, melt sugar over medium heat until amber. Add butter, then slowly stir in cream. Finish with sea salt. Cool slightly.
- Assemble: Top chilled cheesecake with spiced apples and drizzle with caramel. Garnish with a sprinkle of sea salt if desired.
