Description

Rotisserie Chicken Pasta is a creamy and flavorful dish made with tender shredded rotisserie chicken, perfectly cooked pasta, and a rich, savory sauce. It’s the ultimate go-to recipe for busy weeknights, delivering delicious flavor with minimal prep time.

Ingredients

Scale
  • For the Pasta:
  • 3 cups shredded rotisserie chicken (skin removed and bones discarded)
  • 12 oz pasta (penne, fettuccine, or your favorite type)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish (optional)
  • Optional Add-ins:
  • 1 cup frozen peas or spinach
  • ½ teaspoon red pepper flakes (for a little heat)
  • 1 tablespoon lemon juice (for a fresh kick)

Instructions

  1. Boil the Pasta: Cook the pasta according to the package directions in salted water until al dente. Drain the pasta and set aside.
  2. Sauté the Garlic: While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant, being careful not to burn the garlic.
  3. Make the Creamy Sauce: To the skillet, add the heavy cream and chicken broth, stirring to combine. Bring the sauce to a simmer and let it cook for 3–4 minutes to thicken slightly. Add the grated parmesan cheese, salt, and pepper, stirring until the sauce is smooth and creamy.
  4. Add the Rotisserie Chicken: Add the shredded rotisserie chicken to the skillet and stir until the chicken is heated through. You can also add frozen peas or spinach at this stage if you like.
  5. Combine the Pasta and Sauce: Add the cooked pasta to the skillet and toss to coat it with the creamy sauce. Let it cook for another 2 minutes to let the pasta absorb some of the sauce.
  6. Serve and Garnish: Serve the pasta in bowls and garnish with fresh basil or parsley. Add a squeeze of lemon juice for extra brightness if desired.

Notes

  • For a lighter version, swap the heavy cream with half-and-half or Greek yogurt for a creamy texture with fewer calories.
  • Use high-quality rotisserie chicken for the best flavor.
  • Feel free to add any extra veggies or seasonings to customize the dish.
