- 1 small onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme

Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Shred the Rotisserie Chicken: Remove the skin and bones from the rotisserie chicken and shred the meat into bite-sized pieces. Set it aside.
- Mix the Sauce: In a large bowl, combine the cream of chicken soup, sour cream, chicken broth, garlic powder, onion, thyme, salt, and pepper. Stir until smooth and well combined.
- Combine the Rice and Chicken: Add the uncooked rice to the bowl with the sauce mixture and stir to coat the rice evenly. Add in the shredded rotisserie chicken and stir again until all ingredients are evenly distributed.
- Add to Baking Dish: Transfer the rice and chicken mixture into the prepared baking dish and spread it evenly. Cover with aluminum foil.
- Bake: Bake the casserole in the preheated oven for 45 minutes. Then, remove the foil and sprinkle the shredded cheddar cheese evenly over the top. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Add Topping (Optional): If you want a crispy topping, combine the crushed crackers with the melted butter and sprinkle over the casserole. Return to the oven for another 5 minutes until the topping is golden brown.
- Rest and Serve: Let the casserole rest for 5-10 minutes before serving. Garnish with fresh parsley and serve hot.
