  • 2 cups vegetable broth
  • 1 tablespoon tomato paste
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon dried oregano
  • ½ cup fresh basil leaves, packed
  • 12 teaspoons maple syrup (optional)
  • Optional Add-Ins:
  • ½ cup coconut milk or cream
  • Croutons or bread for serving
  • Dollop of tahini (optional)

Instructions

  1. Roast Tomatoes: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange halved tomatoes, onion, and garlic. Drizzle with olive oil, season, and roast 35–40 minutes.
  2. Blend Base: Let cool slightly. Transfer to a blender with tomato paste, red pepper flakes, and half the broth. Blend until smooth. Add more broth for desired consistency.
  3. Simmer: Pour into a pot. Stir in remaining broth and bring to a gentle simmer. Add basil and simmer for 10 minutes.
  4. Adjust: Taste and adjust seasoning. Add maple syrup if acidic. Stir in coconut milk or tahini if desired.
  5. Serve: Ladle into bowls and enjoy with bread or grilled cheese.
