Description
This Irresistible Roasted Jalapeno Popper Grilled Cheese combines smoky roasted jalapeños, creamy cheeses, and buttery toasted bread into a spicy, comforting sandwich you’ll crave. Perfect as a cheat meal, quick lunch, or fun dinner, it’s bold, indulgent, and easy to make.
Ingredients
4 slices of hearty bread (sourdough or country white recommended) 2–3 jalapeño peppers 4 ounces cream cheese, softened (or dairy-free alternative) 1 cup shredded cheddar cheese ½ cup shredded mozzarella cheese 2 tablespoons butter, softened (or vegan butter) Optional: crispy cooked bacon crumbles, green onions for garnish
Instructions
1. Roast the jalapeños: Preheat broiler or heat a dry skillet over medium-high. Roast jalapeños, turning, until skins blister and char. Cover and steam 5 minutes, then peel, deseed, and slice. 2. Make cheese mixture: In a bowl, mix cream cheese, shredded cheddar, mozzarella, and roasted jalapeño slices. 3. Assemble: Spread mixture on two slices of bread, top with remaining bread, and butter the outsides generously. 4. Grill: Heat a skillet over medium. Cook sandwiches 3–4 minutes per side, pressing lightly, until golden and melty. 5. Serve: Slice in half, garnish with green onions or bacon if desired, and enjoy hot.
Notes
• Use thick-cut bread to hold the gooey filling. • Roast extra jalapeños and store for later. • Substitute poblano peppers for a milder version. • For a dairy-free version, use plant-based cheeses and butter.
