- 1 tablespoon olive oil (for roasting garlic)
- 8 ounces feta cheese, crumbled
- 3 tablespoons plain Greek yogurt (or sour cream)
- 1 tablespoon olive oil (for blending)
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
- 2 teaspoons chopped fresh dill
- 2 teaspoons chopped fresh parsley
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
- Roast the Garlic: Preheat oven to 400°F (200°C). Slice top off garlic bulb, drizzle with olive oil, wrap in foil, and roast 30–35 minutes until soft and golden. Cool slightly, then squeeze out cloves.
- Blend the Dip: In a food processor, combine feta, roasted garlic, Greek yogurt, lemon juice, lemon zest, and olive oil. Blend 1–2 minutes until smooth and creamy.
- Add Herbs: Add dill and parsley, pulse a few times to combine without over-blending. Season with salt, pepper, and red pepper flakes if desired.
- Serve: Transfer to serving bowl, drizzle with olive oil or honey, garnish with herbs, and serve with pita chips, bread, or veggies.
