Ingredients

Scale

For the Filling

  • 1 tbsp neutral oil
  • 2 garlic cloves, minced
  • 1 tbsp grated ginger
  • 1/2 cup green onions, chopped
  • 1 cup cabbage, shredded
  • 1/2 cup carrot, shredded
  • 1/2 cup shiitake mushrooms, finely chopped
  • 1 tbsp soy sauce (or tamari)
  • 1 tsp sesame oil
  • Salt and pepper, to taste

For Wrapping & Frying

  • 810 sheets rice paper
  • 2 tbsp neutral oil, for pan-frying

Instructions

  1. Cook the Filling: Heat oil in a skillet. Sauté garlic and ginger for 1–2 minutes. Add cabbage, carrots, mushrooms, and green onions. Cook 6–7 minutes until softened. Stir in soy sauce, sesame oil, salt, and pepper. Let cool.
  2. Soften Rice Paper: Dip one sheet of rice paper in warm water for 10 seconds until pliable. Place on a damp surface.
  3. Wrap Dumplings: Add 2–3 tbsp filling to the center. Fold bottom, then sides, and roll tightly. Double-wrap for extra crispiness.
  4. Pan-Fry: Heat oil in a skillet over medium heat. Place dumplings seam side down and cook 2–3 minutes per side until golden and crispy.
  5. Serve: Enjoy hot with dipping sauces like soy-ginger or sweet chili.

Notes

  • Do not over-soak rice paper—just until soft.
  • Let filling cool before wrapping to avoid tearing.
  • Double-wrap dumplings for extra durability and crunch.
  • Avoid overcrowding the pan when frying.
  • Medium heat ensures crispy dumplings without burning.
