  • 2 cups semi-sweet or milk chocolate chips
  • 1 tablespoon coconut oil or vegetable shortening (for smooth melting)

Instructions

Step 1: Make the Peanut Butter Mixture

  1. In a large mixing bowl, combine peanut butter, softened butter, powdered sugar, and vanilla extract.
  2. Stir until smooth and well combined.
  3. Gently fold in Rice Krispies cereal, being careful not to crush them.

Step 2: Roll & Chill the Balls

  1. Scoop out 1-inch portions of the mixture and roll them into balls.
  2. Place on a parchment-lined baking sheet.
  3. Refrigerate for 30 minutes to firm up.

Step 3: Melt the Chocolate

  1. In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring between each until smooth.
  2. Alternatively, melt using a double boiler for a smoother consistency.

Step 4: Dip & Coat the Peanut Butter Balls

  1. Using a toothpick or fork, dip each peanut butter ball into the melted chocolate, coating evenly.
  2. Let excess chocolate drip off before placing back on the parchment-lined baking sheet.

Step 5: Let Set & Serve

  1. Allow chocolate to harden by refrigerating for 15 minutes.
  2. Once set, enjoy immediately or store for later!
