- 4 tablespoons butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups Rice Krispies cereal
- 2 cups semi-sweet or milk chocolate chips
- 1 tablespoon coconut oil or vegetable shortening (for smooth melting)
Instructions
Step 1: Make the Peanut Butter Mixture
- In a large mixing bowl, combine peanut butter, softened butter, powdered sugar, and vanilla extract.
- Stir until smooth and well combined.
- Gently fold in Rice Krispies cereal, being careful not to crush them.
Step 2: Roll & Chill the Balls
- Scoop out 1-inch portions of the mixture and roll them into balls.
- Place on a parchment-lined baking sheet.
- Refrigerate for 30 minutes to firm up.
Step 3: Melt the Chocolate
- In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring between each until smooth.
- Alternatively, melt using a double boiler for a smoother consistency.
Step 4: Dip & Coat the Peanut Butter Balls
- Using a toothpick or fork, dip each peanut butter ball into the melted chocolate, coating evenly.
- Let excess chocolate drip off before placing back on the parchment-lined baking sheet.
Step 5: Let Set & Serve
- Allow chocolate to harden by refrigerating for 15 minutes.
- Once set, enjoy immediately or store for later!
