  • 1 tbsp cornstarch (or arrowroot for keto)
  • Optional: edible silver sprinkles or glitter

Instructions

  1. Preheat oven to 325°F (160°C). Line a springform pan with parchment paper.
  2. Crust: Mix almond flour, cocoa, melted butter, and sweetener. Press into the pan and bake 10 minutes. Cool.
  3. Filling: Beat cream cheese until smooth. Add sweetener, then eggs one at a time. Mix in sour cream, vanilla, and lemon zest. Pour over cooled crust.
  4. Bake 50–60 minutes until center is set but slightly jiggly. Cool in oven with door cracked for 1 hour, then refrigerate at least 4 hours or overnight.
  5. Topping: Simmer blueberries, water, lemon juice, and sweetener until berries burst. Stir in cornstarch slurry to thicken. Cool completely.
  6. Spread topping over chilled cheesecake. Garnish with edible silver sprinkles or glitter for a Ravenclaw sparkle.
