- 1/2 cup sour cream
- 1 tsp vanilla extract
- Zest of 1 lemon
For the Blueberry Topping
- 2 cups fresh or frozen blueberries
- 1/4 cup water
- 2 tbsp lemon juice
- 1/4 cup powdered erythritol (or sugar)
- 1 tbsp cornstarch (or arrowroot for keto)
- Optional: edible silver sprinkles or glitter
Instructions
- Preheat oven to 325°F (160°C). Line a springform pan with parchment paper.
- Crust: Mix almond flour, cocoa, melted butter, and sweetener. Press into the pan and bake 10 minutes. Cool.
- Filling: Beat cream cheese until smooth. Add sweetener, then eggs one at a time. Mix in sour cream, vanilla, and lemon zest. Pour over cooled crust.
- Bake 50–60 minutes until center is set but slightly jiggly. Cool in oven with door cracked for 1 hour, then refrigerate at least 4 hours or overnight.
- Topping: Simmer blueberries, water, lemon juice, and sweetener until berries burst. Stir in cornstarch slurry to thicken. Cool completely.
- Spread topping over chilled cheesecake. Garnish with edible silver sprinkles or glitter for a Ravenclaw sparkle.
