  • 2 carrots, sliced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups vegetable broth
  • 2 sprigs fresh thyme
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish
  • Optional add-ins: white beans, chickpeas, mushrooms, or potatoes

Instructions

  1. Wash, peel, and chop all vegetables into bite-sized pieces.
  2. Heat olive oil in a large soup pot. Add leeks and garlic, sauté until softened and fragrant.
  3. Stir in eggplant, carrots, and peppers. Cook 5–7 minutes to develop flavor.
  4. Add zucchini, crushed tomatoes, and vegetable broth. Stir well.
  5. Season with thyme, basil, oregano, salt, and pepper. Bring to a boil, then reduce to a simmer.
  6. Cover and cook for 25–30 minutes, stirring occasionally, until vegetables are tender.
  7. Remove thyme sprigs, adjust seasoning, and garnish with fresh parsley before serving.
