- 1 (28 oz) can crushed tomatoes
- 4 cups vegetable broth
- 2 sprigs fresh thyme
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and black pepper, to taste
- Fresh parsley, for garnish
- Optional add-ins: white beans, chickpeas, mushrooms, or potatoes
Instructions
- Wash, peel, and chop all vegetables into bite-sized pieces.
- Heat olive oil in a large soup pot. Add leeks and garlic, sauté until softened and fragrant.
- Stir in eggplant, carrots, and peppers. Cook 5–7 minutes to develop flavor.
- Add zucchini, crushed tomatoes, and vegetable broth. Stir well.
- Season with thyme, basil, oregano, salt, and pepper. Bring to a boil, then reduce to a simmer.
- Cover and cook for 25–30 minutes, stirring occasionally, until vegetables are tender.
- Remove thyme sprigs, adjust seasoning, and garnish with fresh parsley before serving.
