Ingredients
Scale
- 1 cup pumpkin puree (fresh roasted or canned)
- 1 block (200g) feta cheese
- 1/2 cup Greek yogurt (plain, full-fat)
- 1–2 tablespoons olive oil
- 1 tablespoon maple syrup (optional)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Optional toppings: toasted pumpkin seeds, pomegranate arils, honey drizzle, chili flakes
Instructions
- Roast Pumpkin (if using fresh): Roast peeled pumpkin chunks at 400°F (200°C) for 25–30 minutes until soft and caramelized.
- Blend Feta Base: In a food processor, blend feta cheese and Greek yogurt until smooth and creamy.
- Add Flavor: Add pumpkin puree, olive oil, maple syrup, cumin, paprika, salt, and pepper. Blend until fluffy and well combined.
- Adjust: Taste and adjust seasoning, adding more oil or lemon juice if needed.
- Serve: Transfer to a serving bowl. Garnish with toppings like toasted pumpkin seeds, pomegranate arils, chili flakes, or a drizzle of honey.
- Enjoy: Serve immediately with crostini, crackers, or veggies—or refrigerate to serve chilled.
Notes
- Use block feta instead of pre-crumbled for the creamiest result.
- Canned pumpkin puree works perfectly—just avoid pie filling.
- Adjust texture with a little olive oil or lemon juice if too thick.
- Customize toppings: add caramelized onions, herbs, or roasted tomatoes.
- For dairy-free, substitute vegan feta and plant-based yogurt.
