- 1/4 cup brown sugar
- 1 teaspoon pumpkin pie spice
- 1 egg, for egg wash

Instructions
- Preheat: Heat oven to 375°F (190°C). Line a baking sheet with parchment.
- Make filling: In a bowl, mix pumpkin puree, brown sugar, and pumpkin pie spice until smooth.
- Prep pastry: Lightly roll out puff pastry on a floured surface. Cut into 6–8 even strips.
- Fill & fold: Spread a thin line of pumpkin filling down the center of each strip. Fold each strip in half lengthwise to enclose the filling.
- Twist: Hold both ends and gently twist each strip 2–3 times. Arrange on the prepared sheet.
- Egg wash & sugar: Beat the egg and brush over twists. Mix cinnamon with granulated sugar and sprinkle on top.
- Bake: Bake 20–25 minutes until puffed and golden.
- Finish: Cool slightly. Drizzle with optional glaze and serve warm.
