This creamy, cozy Homemade Pumpkin Spice Coffee Creamer is the perfect way to bring autumn flavors to your morning cup any time of year. Ingredients
1 cup half & half or whole milk (or almond, oat, or coconut milk for dairy-free) 1 cup heavy cream (or more milk or plant-based milk for lighter version) 3 tablespoons pure pumpkin puree 2–4 tablespoons maple syrup or honey (or sugar-free sweetener) 1 teaspoon pumpkin pie spice 1 teaspoon vanilla extract Pinch of salt Optional: 1 cinnamon stick (for simmering)
Instructions
1. In a medium saucepan, whisk together milk, cream, pumpkin puree, sweetener, pumpkin pie spice, and salt. 2. Heat over medium-low, whisking occasionally, until steaming but not boiling — about 5 minutes. 3. Remove from heat and stir in vanilla extract. Taste and adjust sweetness if desired. 4. (Optional) Strain through a fine mesh sieve for a smooth texture. 5. Cool to room temperature, then pour into an airtight container or jar. Refrigerate. 6. Shake well before using and add 2–3 tablespoons to your coffee, or to taste.
Notes
• Use pure pumpkin puree, not pumpkin pie filling. • To make vegan, use oat or almond milk and skip honey. • For sugar-free, sweeten with monk fruit, erythritol, or stevia. • Shake before each use as spices and pumpkin may settle.
