- 1 small onion, finely chopped
- 1½ cups sliced mushrooms (cremini, button, or wild mix)
- 2 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon fresh sage, finely chopped (or ½ teaspoon dried)
- 2 eggs
- ½ cup heavy cream or half-and-half
- ½ cup grated Parmesan or Gruyère cheese
Instructions
- Prepare the Crust: Combine flour and salt in a bowl. Cut in cold butter until coarse crumbs form. Add ice water gradually until dough comes together. Form into a disk, wrap, and chill for 30 minutes.
- Pre-Bake the Crust: Preheat oven to 375°F (190°C). Roll out dough and fit into a tart pan. Prick the bottom, line with parchment, add weights, and bake 15 minutes. Remove weights and bake 10 more minutes until golden.
- Sauté the Vegetables: Heat olive oil in a skillet over medium heat. Add onions and cook until soft. Stir in mushrooms and cook until golden. Add garlic, sage, salt, and pepper; cook 1 more minute. Let cool slightly.
- Mix the Filling: In a bowl, whisk pumpkin puree, eggs, and cream. Stir in half the cheese and the sautéed mushroom mixture.
- Assemble the Tart: Pour filling into the pre-baked crust. Sprinkle remaining cheese on top.
- Bake: Bake for 25–30 minutes or until set and lightly golden. Cool for 10 minutes before slicing.
