  • 1/2 cup vanilla protein powder (plant-based or whey)
  • 1/2 cup almond flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • Optional: 1/4 cup mini chocolate chips or chopped walnuts

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with liners.
  2. Mix Wet Ingredients: In a large bowl, whisk pumpkin puree, almond butter, maple syrup, eggs, and vanilla until smooth.
  3. Combine Dry Ingredients: In another bowl, mix protein powder, almond flour, baking soda, pumpkin spice, cinnamon, and salt.
  4. Combine Mixtures: Stir dry ingredients into the wet until just combined. Do not overmix.
  5. Add Mix-Ins: Gently fold in chocolate chips or nuts if using.
  6. Fill Muffin Cups: Spoon batter into liners, filling each about 3/4 full.
  7. Bake: Bake for 18–22 minutes, or until a toothpick comes out clean.
  8. Cool: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
