  • 1 cup all-purpose or whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder

  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/8 teaspoon salt
  • Butter or nonstick spray for the skillet
  • Optional: mini chocolate chips or chopped pecans

Instructions

  1. Mix wet ingredients: In a bowl, whisk together pumpkin puree, Greek yogurt, eggs, milk, vanilla, and syrup until smooth.
  2. Combine dry ingredients: In another bowl, mix flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. Combine both: Slowly stir dry into wet ingredients until just combined. Do not overmix.
  4. Cook: Heat a nonstick skillet over medium. Lightly grease, then pour 1/4 cup batter for each pancake. Cook 2–3 minutes per side.
